Frozen yoghurt has to be one of the quickest and easiest frozen treats you can make. Sure, you have to wait for your fruit to freeze but unlike making ice cream, there is no custard to be made or churning required. You just blitz all of your ingredients and you are done! But for something a bit different, if you blitz all of your ingredients together and THEN freeze them, you are left with a creamy and icy frozen yoghurt granita.
Feel free to substitute the strawberries for your favourite fruit – blueberries would work well and mango or banana would make an extra creamy granita.
Yoghurt is also a great food to incorporate into your diet as the live cultures used in the fermenting process that give yoghurt its distinctive tangy taste are also really great for our gastrointestinal health.
Strawberry Frozen Yoghurt Granita
Preparation time: 5 minutes (plus freezing time)
250g fresh strawberries
1 tablespoon maple syrup
400g plain Greek yoghurt
1. Wash, hull and chop strawberries into quarters
2. Place chopped strawberries, maple syrup and yoghurt in a food processor or blender and blitz until smooth
3. Pour into an ice cream tin or popsicle moulds and place in the freezer until frozen
4. Once frozen scrape with a fork or spoon to serve your granita.
Alternatively, you can freeze the fruit first so that when you blitz all of the ingredients together you have instant frozen yoghurt. This method makes a more traditional soft frozen yoghurt.
